Delightful Pumpkin Coffee Cake

Delightful Pumpkin Coffee Cake

One Sunday morning, about 50 minutes before we had to leave for church, I realized I had to bring breakfast to Sunday School. I spotted a can of pumpkin, decided on a coffee cake, and had it in the oven no less than seven minutes later. Thankfully, it turned out well.

Ingredients

Topping
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons cold butter
  • 1/2 cup rolled oats
  • 1/2 cup chopped pecans
Cake
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 cup plain yogurt
  • 1/2 cup cooked and mashed pumpkin
  • 1 1/2 teaspoons vanilla extract
  • 2 cups whole wheat flour (I used fresh milled soft white wheat)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Method

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Chop the pecans.
  3. Grease and flour your 13x9 pan.
  4. In a small mixing bowl, mix the brown sugar, sugar, and cinnamon (only the amounts for the topping). Using a fork or a pastry cutter, blend in the cold butter. Rather large pieces of butter are fine.
  5. Stir in the pecans and oats. Set aside.
  6. In a small bowl, mix together the yogurt, pumpkin and vanilla.
  7. In another bowl, mix the remaining dry ingredients.
  8. In a large mixing bowl, cream the butter and granulated sugar.
  9. Add the eggs, one at a time, blending well after each addition.
  10. Beginning and ending with the dry ingredients, alternately add the yogurt mixture and the dry mixture, mixing just until mixed.
  11. Pour into prepared pan.
  12. Top evenly with topping mixture.
  13. Bake for 30-35 minutes, or until toothpick inserted into center comes out clean.
