Easy Turkey Breakfast Sausage

Easy Turkey Breakfast Sausage

Even though we don't eat pork, I love sausage. But the brand of turkey sausage I used to buy had BHA and BHT in it, two preservatives I tend to want to avoid. So I started making my own and discovered that it is surprisingly easy: all you need is a pound of ground turkey and some spices that are likely already on hand.

Ingredients

  • 1 pound ground turkey
  • 3/4 teaspoon salt (Kosher salt is best)
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon olive oil, for cooking

Method

  1. Thoroughly mix all ingredients together. I use my hands to make sure it's all completely mixed. Just remember, you're handling raw poultry, so follow careful handling practices and wash your hands with hot water and soap when you're done.
  2. If you want, you can form it into patties and freeze them. Or you can form it into patties and cook them right away. Or you can crumble it into the pan and fry it up to make sausage gravy.
  3. When cooking, because of the low fat content of turkey, put about a tablespoon of olive oil in the pan.
  4. Fry over medium to medium-high heat until the internal temperature of the patties reaches at least 170°F (75°C). If you're frying it as crumbles, cook until thoroughly browned.
