Fresh Peach Pie with Whole Wheat Crust

Peaches just taste like summertime to me. I had a big basket of peaches recently and wanted to capture some of that summer sunshine for dessert that night, so I made a fresh peach pie as if it were an apple pie. It was amazing.

Ingredients

  • Pastry for 2-crust pie made with whole wheat flour
  • 6-8 firm, fresh peaches
  • 1/4 cup whole wheat flour (fresh ground is best)
  • 1 cup organic sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon fresh nutmeg
  • 2 tablespoons unsalted butter

Method

  1. Peel the peaches. To aid in peeling, dunk each peach in boiling water for 2 minutes then dunk into ice water. The peel should easily remove.
  2. Slice the peaches.
  3. Prepare the pie crust. Line the pie plate with the bottom crust.
  4. Preheat oven to 425 degrees F.
  5. In a bowl, mix the flour, sugar, and spices.
  6. Add the peaches and gently stir.
  7. Put in the pie plate. Dot with butter.
  8. Place the top crust on top. Crimp the edges.
  9. Bake at 425 degrees F for 35-45 minutes.
