Grilled Grouper

In HONOR'S REFUGE, Phil’s mom grills grouper for their family dinner night. This is a beautiful main course that can be prepared outside on the grill or inside under the broiler. Mango salad and seasoned rice go perfectly with this light fish.

Ingredients
  

  • 1/4 cup extra virgin olive oil
  • Zest and juice of 1 lemon
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon ground black pepper
  • 4 ea skinless grouper fillets
  • Lemon wedges for serving

Method
 

  1. Whisk together the olive oil, lemon zest, lemon juice, salt, and pepper.
  2. Add the fish and gently toss to coat. Let sit for at least 15 minutes.
  3. To grill: Preheat the grill and lightly oil the grates. Grill the fillets until the bottom turns opaque and you can see darker grill marks, 3 to 4 minutes. Flip and cook another 3 to 4 minutes, until the fish flakes easily with a fork.
  4. To broil: Preheat the broiler. Place the fillets on a lightly greased broiler pan about 6 inches under the broiler. Broil 5 to 6 minutes, or until the fish flakes easily with a fork.
  5. Serve with fresh lemon.

Notes

Either the grill or the broiler works. Pair with mango salad and seasoned rice.
