Natalee's Oatmeal Raisin Cupcakes

Natalee's Oatmeal Raisin Cupcakes

As a tribute to Benjamin Franklin's birthday, my friend Natalee created this recipe using ingredients found in Mr. Franklin's time. It is a wonderful recipe to do with your children as a homeschooling aid.

Ingredients

  • 1/2 cup unsalted butter
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 teaspoon pure vanilla extract
  • 8 ounces organic applesauce
  • 1/2 cup buttermilk
  • 1 1/2 cups old fashioned oats
  • 1 cup flour (fresh ground whole wheat soft white is best)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon (fresh ground is best)
  • 1/2 teaspoon ground cloves
  • 1 teaspoon ground nutmeg (fresh ground is best)
  • 1/2 teaspoon ground ginger
  • 2 cups raisins
  • 1/3 cup rum or orange juice

Method

  1. Reconstitute raisins by placing in a small pan with the rum or orange juice. Bring just to a boil, remove from heat and let cool while preparing the remainder of the cupcake batter.
  2. Preheat oven to 350 degrees F.
  3. Line cupcake pan with cupcake holders, or grease and flour the pan.
  4. Cream butter and sugar.
  5. Beat in eggs, one at a time.
  6. Add vanilla extract, applesauce, and buttermilk.
  7. In a separate bowl, whisk together oats, flour, baking powder, baking soda, and the spices.
  8. Mix the dry ingredients into the wet ingredients, a little bit at a time.
  9. Drain liquid from raisins and fold into the batter.
  10. Fill cupcake liners 3/4 full.
  11. Bake at 350 degrees F for 22 to 25 minutes or until cupcakes bounce back when touched lightly.

Notes

This makes a flat topped moist cake that is perfect for flat topped decorating, eating as a muffin, maybe a streusel topping, or maybe a drizzle of an icing sugar glaze to bring back memories of iced oatmeal raisin cookies!
The original directions also mention allspice and salt when whisking the dry ingredients, though they are not in the ingredient list; add a pinch of each if you like.
