Oatmeal Raisin Cinnamon Chip Cookies

Oatmeal Raisin Cinnamon Chip Cookies

I stumbled upon cinnamon chips years ago and made the recipe on the back of the bag. These things were AMAZING, and everywhere I went, people asked me for the recipe. I have since adjusted the recipe on the back, and they're even better than they were before (which seems not only improbable, but impossible).

Ingredients

  • 1/2 cup butter
  • 1/2 cup coconut oil
  • 1 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/2 cups quick cooking oats (don't use old fashioned; the cookies will be terribly chewy)
  • 1 2/3 cup cinnamon chips (10-ounce package of Hershey's brand)
  • 3/4 cup raisins

Method

  1. Preheat oven to 350 degrees F.
  2. Cream butter, oil, and eggs. Add sugars and vanilla. Cream together.
  3. Add the oatmeal, flour, soda, and salt. Stir until well mixed.
  4. Add the chips and the raisins.
  5. Drop by rounded spoonfuls onto a cookie sheet.
  6. Bake 12 to 15 minutes at 350 degrees F, or until browned.
  7. Transfer to cooling racks to cool.

Cinnamon chips can be hard to find; when we moved to Kentucky, we found that Meijer stores carry them.
