Red Velvet Cupcakes with Cream Cheese Frosting

Red velvet is a festive dessert for any holiday — chocolate cake topped with cream cheese frosting. It’s the perfect dessert for Gloria and Jeff’s Christmas celebration in Blizzard in the Bluegrass.

Ingredients
  

The Cake
  • 1 1/4 cups unbleached all-purpose flour
  • 1 cup unbleached cake flour
  • 3 tablespoons unsweetened baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher or sea salt
  • 1 1/2 cups dark brown sugar
  • 1/4 cup butter softened
  • 2 ea eggs large, room temperature
  • 1 cup buttermilk
  • 1 tablespoon white vinegar
  • 1 ounce red food coloring
The Frosting
  • 8 ounces cream cheese room temperature
  • 1/2 cup unsalted butter softened
  • 3 1/4 cups powdered sugar 1 pound
  • 1 teaspoon vanilla extract

Method
 

For the Cake
  1. Preheat the oven to 325°F (160°C).
  2. Line 2 cupcake pans with liners, or grease and flour 2 cupcake pans, to make 24 cupcakes.
  3. In a bowl, whisk together the flours, cocoa, baking soda, and salt.
  4. In a measuring cup, mix together the buttermilk, vinegar, and food coloring.
  5. In a mixing bowl on medium speed, beat the brown sugar and 1/4 cup butter until smooth. Add the eggs one at a time until thoroughly mixed.
  6. Add one-third of the dry ingredients and beat until smooth. Add one-third of the wet ingredients and beat until smooth. Repeat, ending with the last of the wet ingredients.
  7. Fill each cupcake liner about 2/3 full. Bake at 325°F (160°C) for 20 to 25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  8. Remove from the pans and cool completely on wire racks.
For the Frosting
  1. In a mixing bowl, beat the cream cheese and butter on high speed until smooth.
  2. Gradually add the powdered sugar and beat until smooth. Beat in the vanilla.
  3. Top each cooled cupcake with a generous portion of frosting. If desired, finish with cake crumbs or chopped pecans.
