Secret Ingredient Taco Salad

Secret Ingredient Taco Salad

This is a family favorite. It's a very quick, inexpensive meal that can feed several people. The secret ingredient makes this dish fall into the absolutely-not-so-healthy category, but oh, it makes it taste so good.

Ingredients

  • 1 pound ground hamburger
  • 1 small onion, chopped
  • 1 can kidney beans
  • 1 small can tomato sauce
  • 1 teaspoon Kosher or sea salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 tablespoon cumin
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 head iceberg lettuce
  • 1 tomato
  • 1 can black olives
  • 4 scallions
  • 8 ounces cheddar cheese
  • 1 bag Doritos
  • sour cream
  • taco sauce or salsa

Method

  1. Chop onion.
  2. Cook hamburger and onion in a frying pan over medium to medium-high heat until hamburger is browned.
  3. In the meantime, chop lettuce. Slice black olives, chop tomato, and slice scallions. Grate cheese. Add it all to a large bowl.
  4. And now for the secret ingredient: crush half the bag of Doritos and put them in the bowl. (You can skip this step if you want to.)
  5. When the hamburger is browned, drain it and put it back in the frying pan. Add the can of kidney beans and the can of tomato sauce.
  6. Add the spices and mix well.
  7. Simmer about 5 minutes. Add to the bowl and mix all of the ingredients well.
  8. Serve with sour cream, salsa, and the remaining bag of Doritos.

Notes

Serves 6 easily, but don't expect too much for leftovers.
You can skip the kidney beans and tomato sauce if you have a can of chili beans.
We don't eat Doritos anymore because we try to stay away from non-organic corn (due to GMOs). However, I have discovered some organic Dorito-like chips at Whole Foods, and will occasionally splurge on them to make this dish.
