Ingredients
Method
- Peel and chop the apples.
- Melt the butter.
- Fill a deep skillet with about 1 inch of oil. Heat the oil to 375°F (190°C).
- Mix the powdered sugar and the 2 tablespoons milk in a small bowl. Set aside.
- Mix the dry ingredients in a large bowl. Make a well in the center. Add the milk, egg, melted butter, and vanilla.
- Stir until just mixed (do not use a whisk; the dough is really thick). Gently stir in the apples. There is going to seem to be as much apple as there is dough, and this is a good thing.
- Test the oil by dropping a single water drop into the oil. If it skitters on the top, it's ready.
- Place a spoonful of the batter (about the size of a golf ball) in the oil. Add spoonfuls until you have 4 or 5 fritters in the oil. Don't overcrowd the oil.
- Let cook for about a minute. Using a slotted spoon, carefully turn the fritters, and let them cook 45 to 60 seconds more.
- Using the slotted spoon, carefully remove the fritters to a paper towel lined plate.
- After a minute or two, roll each fritter in the powdered sugar glaze.
- Place on a wire rack to cool and dry.
