Easy Whole Wheat Apple Fritters
Fritters
- 1 1/4 cups whole wheat flour (I use fresh-ground soft white wheat)
- 1/3 cup sugar
- 1 teaspoon aluminum-free baking powder
- 1/4 teaspoon Kosher salt
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1 tablespoon butter
- 1 egg
- 1/3 cup whole milk
- 1 1/2 cups chopped apple
- oil for frying (I use grapeseed oil or organic canola oil)
Glaze
- 1 cup powdered sugar
- 2 tablespoons whole milk
Peel and chop the apples.
Melt the butter.
Fill a deep skillet with about 1 inch of oil. Heat the oil to 375°F (190°C).
Mix the powdered sugar and the 2 tablespoons milk in a small bowl. Set aside.
Mix the dry ingredients in a large bowl. Make a well in the center. Add the milk, egg, melted butter, and vanilla.
Stir until just mixed (do not use a whisk; the dough is really thick). Gently stir in the apples. There is going to seem to be as much apple as there is dough, and this is a good thing.
Test the oil by dropping a single water drop into the oil. If it skitters on the top, it’s ready.
Place a spoonful of the batter (about the size of a golf ball) in the oil. Add spoonfuls until you have 4 or 5 fritters in the oil. Don’t overcrowd the oil.
Let cook for about a minute. Using a slotted spoon, carefully turn the fritters, and let them cook 45 to 60 seconds more.
Using the slotted spoon, carefully remove the fritters to a paper towel lined plate.
After a minute or two, roll each fritter in the powdered sugar glaze.
Place on a wire rack to cool and dry.
