Whole Wheat Vanilla Wafers

Whole Wheat Vanilla Wafers

Whole Wheat Vanilla Wafers

I found this recipe on Heavenly Homemaker’s site; the only thing I do differently is to use vanilla beans instead of vanilla extract. Gregg has always loved a snack of vanilla wafers and peanut butter, and I love that I found such a healthy recipe. I use them when I make Banana Pudding and Mascarpone Cheesecake with Almond Crust.

  • 3/4 cup light brown sugar
  • 1 egg
  • seeds from 1 vanilla pod OR 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder

Method

  1. Preheat oven to 325 degrees F.

  3. Seed the vanilla pod.
  4. Put butter, sugar, egg, and vanilla in a large bowl. Cream together.

  6. Put in a piping bag. (If you don’t have one, you can use a small spoon to do the same thing.)
  7. Pipe small drops of dough onto the parchment paper, about the size of a cherry tomato.
  8. Place in oven. Bake for 15 minutes. After 15 minutes, turn the oven off and leave them in there for 30 more minutes.
  9. Remove from oven and place on cooling rack.
