A good Italian turkey sausage and turkey pepperoni is a great tasting and healthy alternative to pork, and the flavor combination on this pizza with the sauce and the peppers is just wonderful. It makes about 8 good slices of about 300 calories each.
Fiesta Pita Pizzas
A wonderful recipe, especially if you use my Whole Wheat Perfect Pocket Pita Bread recipe. Pinto beans are rich in folate, but best of all, these are fun to eat and they taste like a party.
Hawaiian Pineapple and Turkey Ham Pizza
My favorite pizza at Papa’s Pizza in my parents’ hometown was their Hawaiian pizza: Canadian bacon, pineapple, and fresh tomato. This is my variation of it, and I love turkey ham and pineapple as much as I loved Papa’s Hawaiian pizza.
Savory Lamb and Fennel Stew
I was shopping at Whole Foods one day and saw lamb shank in their meat counter. I’d just put a bunch of fennel in my basket, and when I saw the shank I thought how good a lamb and fennel stew would be. I’d never done stew without beef before, but the final result was amazing.
Homemade Chicken Noodle Soup with Spinach
This is an awesome, hearty soup. It is packed full of good-for-you yumminess and will beat any chicken soup in any can on a grocery store shelf. On a whim one day I tossed in a few handfuls of fresh spinach, and it took this amazing soup over the edge.
Smoky BBQ Chicken Pizza
It is possible to make a great tasting and actually healthy, good-for-you pizza. This one is a special treat because I get to use my great friend Kelly the Kitchen Kop’s very own barbeque sauce, and it makes about 8 good slices of just over 275 calories each.
Pummelo Avocado Salsa
I created this recipe after researching pummelos. I kept finding it paired with avocados in different things, so I put together a quick salsa. I was a bit worried about the cilantro, but the final product was very tasty.
Candied Pummelo Rind
While researching pummelos, I came across several references to candying the rind. It smelled so wonderful that I thought I would try my hand at it, and I’m so glad I did. What a delicious, citrusy treat, and it would be perfect on top of a cake.
Traditional Turkey Gravy
When my mom makes turkey gravy, she always makes giblet gravy, and it took me many years to learn how to make any other kind. Now that I make this recipe, it would be hard for me to say whether I prefer giblet gravy over this traditional gravy or not. It is really flavorful and the perfect complement to the rest of your Thanksgiving feast.
Simple Roasted Brussels Sprouts
Scott calls these “salads” and will eat them raw if I let him. I’ve tried different seasonings, spices, and methods, and it all comes back to just simple salt and pepper and a roasting in olive oil. That makes the best way to serve them for me.
