I made this lamb in a hotel room in Birmingham, Alabama. The lamb was purchased at Fresh Market and was from a local farmer. It was AMAZING.
Quick & Easy Sloppy Joes
My dad came up with this recipe one time when he had to make dinner. He browned hamburger then started dumping things into the pan, using home canned tomatoes and home canned green beans, which made his version amazing. I’ve not enjoyed Sloppy Joes without the green veggie since.
Taste of Summer Lemon Blueberry Yogurt Cake
I derived this recipe from Food Network’s Ina Garten. It tastes just like summertime to me, and it is beautiful when it’s sliced. It has become a summer staple in our house.
Comfort Food Meatloaf
Meatloaf is one of my favorite dishes, whether I prepare it or my mother prepares it. I’ve always used green peppers when I make it, but I didn’t have any one day, so I used yellow peppers. I LOVED the difference, and I will from now on use yellow peppers to make my meatloaf.
Winter Vegetable Lasagna
A wonderful recipe based on a recipe from the National Pasta Association website. I love that it’s a hearty vegetarian recipe.
Best Corn on the Cob Ever
If you prepare your corn on the cob this way, it will never fail you. When you bite into your corn, it will be crisp, juicy, perfect.
Traditional “Wash Board” Omelet
During cattle drives, “Cookie” had to clean out the “crumb castle” or chuck wagon bin every couple of days, and that was when wash board omelets might be served. Full of vegetables, colorful and light, this delicious concoction is filling and healthy.
Tantalizing Tomato and Onion Tart
This would be an amazing brunch or lunch dish, a perfect potluck change from the normal pot of country beans, or the base for a vegetarian dinner. It is almost limitless as a dish.
Decadent Cookies & Cream Cupcakes
The pictures were so amazing and so appealing that, despite my aversion to packaged cookies, they made me want to make these for a church party. I’m not going to fool you into thinking there’s anything moderately good for you about these, but oh my, they were good. Very rich, but very good.
Slightly Spicy Couscous Stuffed Tomatoes
This dish is wonderful served as a vegetable side dish or as a light lunch entrée. It is also a perfect addition to a Daniel Fast regimen or for observing Lent. Brushing the inside of the tomato shell with Tabasco or your favorite hot sauce adds a robust hint of the Southwest without overpowering the dish with heat.
