This is an amazing dish. The pastry is so light and buttery that it nearly melts in your mouth, and the cheese combined with the chilies is a remarkable flavor. They can be an appetizer for a Cinco de Mayo celebration, or a delicious and savory treat for lunch.
Festive Tres Leches Cake
A beautiful finish to any festive Cinco de Mayo celebration. Tres leches means “three milk,” so this translates to “Three Milk Cake.” This blends the idea of a three-milk cake from Latin American tradition with a rum cake from Puerto Rican tradition.
Wonderful Whole Wheat Sopapillas
A good friend asked me to make whole wheat sopapillas, so I researched recipes until I came up with one that will please all of us “real food” minded mamas. Sopapilla means “little pillow” and can be used in a savory dish much like a tortilla or pita bread. I used them as a breakfast bread drizzled with honey, and they were beyond amazing.
Sweetened Condensed Milk Substitute
While making Tres Leches Cake at 5:00 in the morning, with two sleeping toddlers upstairs and a husband in Afghanistan, I discovered I didn’t have any sweetened condensed milk. So I discovered a good emergency substitution. The cake tasted fantastic, so I’m calling this one a success.
Beef Bacon Quiche Tarts
This is the perfect brunch dish. The bacon and the onion and peppers really enhance the flavor of the eggs. I used Granny Everman’s Yeast Roll recipe with whole wheat flour for the crust, and they were a huge hit when I took them to church for my Sunday School class breakfast.
Cinnamon Honey Scones with Raisins
This is a soaked wheat recipe I saw on GNOWFGLINS’ blog: you soak the wheat overnight in an acid so that the phytic acid in the grain is broken down and your body can absorb all of its nutrients. I worried they would be heavy and dense, but they were so light and melt-in-your-mouth. The original recipe calls them “biscuits,” but they seemed more like a scone to me.
Quick and Succulent Pizza Snack
Scott wanted pizza for lunch, but my pizza dough was frozen and I didn’t have an hour for dough to rise, so I improvised with table water crackers as the crust and a quick ketchup-and-spice sauce. I worried they would get soggy, but they didn’t at all. Twenty minutes after Scott voiced the desire for pizza, we were sitting down to enjoy it.
Refreshing Orange Ice Cream
This is the most refreshing ice cream you’ll ever eat. Just three ingredients go into a 1-gallon ice cream maker, and it will be the hit of any summertime picnic.
Whole Wheat Brown Sugar Apple Crisp with Cinnamon Whipped Cream
It’s apple season here at our household, and our apple tree is bursting with fruit. I was out of pie plates, so instead of an apple pie I used a square cake pan and made an apple crisp. This was so good, very simple, and so easy to make.
Summer Squash Chowder
I spent several weeks desperately trying to come up with some ideas other than zucchini bread for all of the squash I had cropping up, and stumbled upon this recipe. It’s PHENOMENAL, the perfect use for all of the beautiful squash and zucchini that grow in such abundance in the summer time. It’s a very light soup that would be a perfect first course.
