Ingredients

Steaks
  • 4 beef tenderloin steaks, cut 1 inch thick
  • 1 large clove garlic, halved
  • 2 teaspoons chopped fresh parsley
  • ½ teaspoon Kosher or sea salt
Cheese Topping
  • 2 tablespoons cream cheese, softened
  • 4 teaspoons crumbled blue cheese
  • 4 teaspoons plain yogurt
  • 2 teaspoons minced onion
  • Dash fresh ground white pepper

Method

  1. Preheat the oven set for broil.
  2. Chop the fresh parsley, medium fine. Cut the beef tenderloin steaks 1 inch thick if necessary. Slice the garlic clove in half.
  3. In a small bowl, combine all the cheese topping ingredients and set aside.
  4. Rub each side of the steaks with garlic. Place the steaks on the rack in a broiler pan so the surface of the meat is 2 to 3 inches from the heat. Broil 5 to 6 minutes.
  5. Season with ¼ teaspoon salt. Turn and broil 5 to 6 minutes.
  6. Season with an additional ¼ teaspoon salt. Top each steak with an equal amount of the reserved cheese topping. Broil an additional 1 to 2 minutes. Garnish with parsley.

Notes

This gives you a steak cooked medium to medium-rare. If you want it to be more done, just broil it for a couple extra minutes on each side before adding the blue cheese. Use a meat thermometer to determine doneness.
