Bison or Lamb Chorizo Nachos
- Homemade Chorizo (makes 16 ounces)
- 1 pound lean bison, lean lamb, or lean grass-fed beef, well ground
- 1/4 cup plus 1 tablespoon old-fashioned oats (do not use instant or quick)
- 1/4 cup red wine vinegar
- 2 tablespoons egg
- 1/4 cup chili powder
- 2 teaspoons freshly minced garlic
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher or sea salt
- Extra virgin olive oil spray
Nachos
- 1 ounce all-natural whole grain baked tortilla chips (about a good handful)
- 1/2 cup organic black beans (if canned, use no-salt-added, rinsed and drained)
- 2 tablespoons all-natural salsa con queso, heated
- 1/4 cup well-drained fresh pico de gallo or fresh salsa
- 1 tablespoon finely chopped whole scallions
Prepare the Chorizo
Combine the oats, vinegar, and egg in a medium bowl. Allow to stand for 3 minutes, or until the oats begin to soften.
Add the chili powder, garlic, oregano, and salt. Stir until all ingredients are well combined.
Using your clean hands or a fork, mix in the meat until well combined. Transfer the mixture to a resealable container and refrigerate at least 24 hours before using.
Make the Nachos
Heat a small skillet over medium heat. When hot, spray lightly with olive oil spray. Add the chorizo. Cook, breaking into large chunks, for 1 or 2 minutes, or until the meat is no longer pink.
Arrange the chips on a large dinner plate or small platter. Top evenly with the black beans, then 2 1/2 ounces of the chorizo.
Drizzle the salsa con queso evenly. Top with pico de gallo or fresh salsa and scallions.

Bison is lower in calories and unhealthy fat than pork, and leaner than beef. It is packed with B vitamins, omega-3 fatty acids, selenium, and CLA. Don’t have a local, inexpensive source for bison? Use lean leg of lamb or a good grass-fed beef.
High in selenium and vitamin A.
