Magical Mascarpone Cheese Frosting
I created this recipe when I went to make cream cheese frosting and discovered that I was out. It was absolutely delicious and will be my first choice above cream cheese from now on. Perfect for your red velvet cakes, spice cakes, applesauce cakes… the options are limitless.

- Beat the butter and mascarpone cheese until creamy.
- Gradually add the powdered sugar, beating until light and fluffy.
- Stir in the vanilla.
- Frost your favorite cake, cupcake, or cookie.

Enough frosting to frost a multi-layered cake. The original post calls for stirring in vanilla but doesn’t give an amount, so add it to taste. No trans fats and low in sodium.
