I love how this recipe is a sweet and sour flavor, something that you just wouldn’t think to pair with hamburger meat, yet it absolutely works. It takes almost no time to prepare and is a nice, quick meal when you’re in a hurry but want to feed your family something healthy.
Cajun Ground Beef Skillet
This is a wonderful recipe with a hint of kick. If you have pre-prepared rice, it’s a quick fix, but remember the rice will take 45 minutes to cook, so try to plan ahead a little bit.
Crockpot Ratatouille
I’d never made Ratatouille before, but my friend Jen often does, and as I was preparing the vegan menu for our Daniel Fast I decided to give it a go. This was an amazing recipe and the flavors are so fresh. There’s something specific about the layering of the veggies and the order in which you layer them that makes the dish so good.
Irish Ground Beef Skillet
This is an easy, quick skillet dinner that provides a different taste than the normal macaroni casserole. It is also extremely affordable.
Winter Squash Stuffed with Wild Rice, Toasted Pecans & Dried Cherries
I love finding a recipe that will be my new go-to recipe for entertaining. We served this as a main course using acorn squash, and the next evening as a side using pumpkins. The rice is amazing alone, but paired with the winter squash, it is remarkable, and it would be beautiful gracing any holiday table.
Oven Roasted Tomato Sauce with Garlic & Basil
My garden is STILL producing tomatoes, and I wanted to do something different with them, so I tried oven roasted tomato sauce. This was easy as far as doing anything with tomatoes goes: I still had to wash and cut the tomatoes, but I didn’t need to seed them or peel them.
Red Velvet Whoopie Pies
Whoopie pies are traditionally chocolate, and Gregg isn’t a huge chocolate fan, so I made a red velvet version for a night time picnic date. This recipe, adapted slightly from Liz at Hoosier Homemade, was EASY.
Decadent & Creamy Marshmallow Coconut Frosting
I made this frosting to fill my Red Velvet Whoopie Pies, but it would be an amazing frosting for any kind of cupcake or cake.
Fluffy Homemade Marshmallow Creme
Every time I’ve made my own marshmallow creme for a recipe, be it for Homemade Fudge or the filling for Whoopie Pies, the flavor of the end result is so much better than if I’d used a jar of “marshmallow fluff.” It’s so easy to make that I haven’t bought the jar stuff in years.
Homemade Taco Seasoning Spice Blend
I’m not a fan of the packaged seasoning mixes only because they contain ingredients other than the spices. I haven’t been using them now for about two years and haven’t missed using them yet.
