Freezing Fresh Corn

Freezing Fresh Corn

When I found corn on the cob on a fantastic sale, I called my grandma, my foremost authority on preserving, and said, “Now what?” The first time I ate this, I was amazed at how fresh it tasted, like I had just picked it that day and cooked it for dinner. It was the best frozen corn I’d ever eaten.

Green and Gold Casserole

Green and Gold Casserole

My high school colors were green and gold, and my family is from Springfield, Oregon, sister-city to Eugene, home of the Oregon Ducks, whose colors are also green and gold. Which is what makes this zucchini and yellow squash casserole so much fun. I could take it to a class reunion or a football party and be a winner either way.

Dehydrated Blueberries

The price of dried blueberries in the bulk food aisle, $13.99 per pound, gave me pause. Then I remembered that I had an unused dehydrator sitting on the shelf, so I bought four pounds of fresh blueberries on sale and dried them myself. I think it was definitely worth the work to dry them.

Sauteed Summer Squash with Radishes

I went to make you Sauteed Summer Squash, only the yellow squash I had picked the day before disappeared. Not wanting you to be stuck with just zucchini and onion, I decided to utilize some of the radishes fresh out of my garden. The result was simply amazing; I will definitely be adding radishes to my squash sautes from now on.

Smooth and Creamy French Vanilla Bean Honey Ice Cream

Smooth and Creamy French Vanilla Bean Honey Ice Cream

My grandfather had an ice cream maker that sat in a wooden tub and churned out the most amazing tasting, sweet and creamy concoction ever known to man’s mouth. I have been on a search for a recipe like his ever since I got my first ice cream maker, and this one comes mighty close. Just a few ingredients (I used honey instead of sugar) and you’ll have “the” ice cream that your kids and grand kids will beg you to make.
