Chocolate Chip Cookie Ice Cream Sandwiches

I needed a quick dessert and spied my full cookie jar of Whole Wheat Dark Chocolate Chip Cookies, made with slivered almonds. I used those with my Smooth and Creamy French Vanilla Bean Ice Cream to make ice cream sandwiches: a taste of beautiful summertime heaven.

Ingredients Method

Ingredients
  

  • Whole Wheat Dark Chocolate Chip Cookies (2 per sandwich)
  • Smooth and Creamy French Vanilla Bean Ice Cream (1 scoop per sandwich)

Method
 

  1. Take two cookies of as equal size as you can get and put them both top down.
  2. Put a scoop of ice cream on one of them.
  3. Then use the other for the “top.”
  4. Wrap them individually in aluminum foil and put them in the freezer.
