Grandma Poe’s Zucchini Bread

An old Kentucky boy called this “the best zucchini bread he ever did eat.” High compliments indeed.

Notes

I do not use nuts because I have a 1-year-old who eats it. When he gets old enough to eat nuts, they will go back into the bread. Any pecans or walnuts will work just fine.
I use olive oil a lot, but I do not like to use olive oil in my baking; I’ve never liked the taste. But a lot of people prefer the health benefits of olive oil over canola or safflower oil. Olive oil would work in this recipe just fine.
The original recipe calls for salt in the directions but doesn’t give an amount.
