Mouth-Watering Marble Cake
- 2 ⅞ cups cake flour
- 1 ⅞ cups sugar
- 4 ½ teaspoons baking powder
- 1 teaspoon Kosher salt
- ⅔ cup coconut oil
- 1 ¼ cup whole milk
- 2 teaspoons vanilla extract
- 5 egg whites
Marbling
- 1 ¼ ounce chocolate, melted
- ⅛ teaspoon baking soda
- 2 tablespoons warm water
Grease and flour the pan(s).
Heat oven to 350°F.
Sift together the flour, sugar, baking powder, and salt. Add the coconut oil.
Mix together the milk and vanilla and add about half to the bowl. Beat on medium speed for 2 minutes.
Add the remaining milk and extract and the egg whites and beat another 2 minutes.
Pour ⅔ of the batter into the prepared pans.
Mix the remaining batter with the chocolate, baking soda, and water. Spoon here and there over the white batter.
Using a butter knife, cut through the batter several times to create a marbling effect.
Bake until a toothpick inserted in the center comes out clean. For layers, about 30-35 minutes; for oblong, about 35-40 minutes.
