Easy Whole Wheat Apple Fritters

I made these for breakfast one Sunday morning, and my kids asked for them all week long. They were incredibly easy to make and tasted amazing.

Ingredients

Fritters
  • 1 1/4 cups whole wheat flour (I use fresh-ground soft white wheat)
  • 1/3 cup sugar
  • 1 teaspoon aluminum-free baking powder
  • 1/4 teaspoon Kosher salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1 egg
  • 1/3 cup whole milk
  • 1 1/2 cups chopped apple
  • oil for frying (I use grapeseed oil or organic canola oil)
Glaze
  • 1 cup powdered sugar
  • 2 tablespoons whole milk

Method

  1. Peel and chop the apples.
  2. Melt the butter.
  3. Fill a deep skillet with about 1 inch of oil. Heat the oil to 375°F (190°C).
  4. Mix the powdered sugar and the 2 tablespoons milk in a small bowl. Set aside.
  5. Mix the dry ingredients in a large bowl. Make a well in the center. Add the milk, egg, melted butter, and vanilla.
  6. Stir until just mixed (do not use a whisk; the dough is really thick). Gently stir in the apples. There is going to seem to be as much apple as there is dough, and this is a good thing.
  7. Test the oil by dropping a single water drop into the oil. If it skitters on the top, it’s ready.
  8. Place a spoonful of the batter (about the size of a golf ball) in the oil. Add spoonfuls until you have 4 or 5 fritters in the oil. Don’t overcrowd the oil.
  9. Let cook for about a minute. Using a slotted spoon, carefully turn the fritters, and let them cook 45 to 60 seconds more.
  10. Using the slotted spoon, carefully remove the fritters to a paper towel lined plate.
  11. After a minute or two, roll each fritter in the powdered sugar glaze.
  12. Place on a wire rack to cool and dry.
