Delightful Spinach and Dill Eggs
- 2 eggs
- 1 tablespoon water
- ⅓ cup baby spinach, washed
- 2 tablespoons Havarti cheese with dill
- salt and pepper to taste
- butter for pan
Tear or chop the spinach.
Grate the cheese.
Using a fork, beat the eggs with the water until well beaten.
Heat the skillet over medium heat. Add the butter. When the butter is melted, spread it around the pan.
Add the eggs. Sprinkle with salt and pepper.
Sprinkle with cheese.
Sprinkle with spinach.
When the eggs are set on the bottom, gently scrape them around the pan, “scrambling” them as you go.
As soon as the eggs are cooked through, remove them from the pan and serve.

Do not leave the eggs in the pan removed from the heat, because the residual heat in the pan will dry them out. Very low in sugar, high in calcium and vitamin A.
