Family Fit Fried Potatoes

This dish is much healthier than the word “Fried” would suggest. Very tasty, too.

Ingredients

  • 2 large potatoes, scrubbed clean with skin on
  • ½ large onion
  • 1-2 teaspoons Kosher or Sea salt (to taste)
  • 1 teaspoon black pepper
  • olive oil

Method

  1. Cut the potatoes in half lengthwise, then slice to no more than ¼ inch thickness.
  2. Slice the onion in thin slices.
  3. In a frying pan, heat ½ inch of olive oil to medium heat.
  4. Place the potatoes in the frying pan. Top with the onions (do not put the onions in before the potatoes, because they will burn before the potatoes cook through). Salt and pepper.
  5. Put a lid on it and let it sit for several minutes.
  6. When the bottom layer of potatoes starts to brown, turn them.
  7. Leave the lid off for a few minutes, turn the potatoes again, and put the lid back on for about 5 more minutes.
  8. Potatoes are done when a fork pierces them easily.
  9. If needed, drain on paper towels.

Olive oil is always a healthier choice. This is good served with breakfast or with dinner.
