Friday Fried Fish

Friday Fried Fish

Friday Fried Fish

Even though baked is “healthier,” this dish is really, really good. I like to serve it with hush puppies, fried potatoes, and cole slaw.

Ingredients

  • 4 fillets of white fish (I prefer tilapia)
  • 2 cups all purpose flour
  • 1 cup milk
  • ¼ cup canola or safflower oil (or olive oil)
  • 1 ½ teaspoon Kosher or Sea salt
  • ¼ teaspoon black pepper
  • 1 egg
  • oil for frying (canola or olive)

Method

  1. Cut the fish in chunks.
  2. In a deep frying pan or a dutch oven, heat 2 inches of oil to 375°F.
  3. Mix together 1 cup flour, 1 teaspoon salt, and ¼ teaspoon black pepper. This is to dredge the fish before putting it in the batter. I use a pie plate.
  4. In a separate bowl, mix together 1 cup flour, the milk, ¼ cup oil, ½ teaspoon salt, and the egg.
  5. Dredge the fish in the flour mixture.
  6. Dip in the batter.
  7. Gently place in the hot oil.
  8. This will cook very quickly (2-3 minutes). As soon as it’s brown, turn over and let the other side cook.
  9. When both sides are golden brown, drain on paper towels.
