Ingredients

  • 1 package active dry yeast (or 2 1/4 teaspoons yeast)
  • 1 cup warm water (105-110 degrees F)
  • 1/2 cup butter, melted
  • 3-3 1/2 cups whole wheat flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • oil to grease the bowl for rising and the muffin tins

Method

  1. Fill the mixing bowl with hot water and dump out the water to warm the bowl.
  2. Melt the butter.
  3. Dissolve the yeast in the warm water in the warmed mixing bowl.
  4. Add 1/4 cup of the melted butter, flour, sugar, and salt.
  5. Mix 1 minute on speed 2 (or stir) until well blended.
  6. Continuing on speed 2, continue to add flour, 1/2 cup at a time, until the dough starts to clean the sides of the bowl.
  7. Mix for 2 more minutes (or knead by hand for 10) or until smooth and elastic.
  8. Place in a greased bowl. Turn to coat it all in oil. Cover and let rise for 1 hour or until doubled in bulk.
  9. Put on a lightly floured surface. Roll out into a 12×9 inch rectangle.
  10. Brush with the remaining 1/4 cup of butter. Cut into 6 strips.
  11. Stack the strips together. While stacked, cut into 12 pieces.
  12. Place into greased muffin tins, cut side up.
  13. Cover and let rise about 45 minutes.
  14. While they’re rising, preheat oven to 400 degrees F.
  15. Bake for 15 to 20 minutes or until nicely browned.
  16. Remove immediately from pans.

You will need a muffin tin and a pizza cutter or sharp knife. A stand mixer with a dough hook is handy if you’re not going to knead by hand.
